Cheese Marble Brownies

Cheese Marble Brownies



This lovely brownie is Sabrina's (eldest daughter) favourite and she always makes it whenever we have a function or guests over. It's become a favorite and if you like the taste of dark chocolate or cheese ..then this is something for you to try out.  The combination of a mild bitter chocolate taste with cheese is simply yummy. We made this together ...making a double recipe and dividing it into 3 loaf pans. There are various recipes over the web that are really good but the one we made however was improvised a little to suit our taste buds and convenience. 

The trick to making a dense and fudgy brownie is to reduce the amount of flour and omitting baking powder. Also, incorporate as little air as possible when mixing the batter, so hand mixing with a wooden spoon is preferable for this texture. However, with the one we made, the recipe called for a little baking powder only to the chocolate layer. This made the chocolate base more of a cake base with the heavy cheese layer on it.  

 

Cheese Marble Brownies

 Ingredients :

Chocolate Layer
120 gm butter
150 gm semi sweet or dark chocolate
2 tabsp golden syrup (we used honey as a substitute)
2 large  beaten eggs
1 tsp vanilla essence
60 gm cake flour
1/2 tsp baking powder

Cheese Layer
250 gm Cream Cheese
100 gm fine granulated sugar
1 egg
1/8 tsp salt

Method
  1. Melt chocolate and butter in a double boiler. Allow to cool
  2. Beat eggs till fluffy and gradually add in the syrup and chocolate. 
  3. Fold in dry ingredients.
  4. Pour 3/4 of the mixture into 6in by 9 in by 2 in pan - Bake for 10 minutes.
  5. Pour cheese mixture of the baked layer.
  6. Pour remaining batter over the cheese filling and swirl lightly with spatula.
  7. Bake at 180°C for 25 minutes.

Cake and Spondolysis

A recent Birthday order which was on my Birthday. The irony of it...making a cake for someone else on my Birthday :D. Jayanti wanted a Butter Cake frosted with Sweet Buttercream.


 



Below a very delayed post from last month. The cake was made during my spondolysis problem acting up badly. In pain but managed to make the cake...deco terrible but the taste made up for it. The Birthday was at a Bowling Alley, so hence the bowling theme. Sugee Cake frosted with sweet buttercream and a little chocolate fondant deco apart from the sugarpaste models of the bowling ball and pins.

Fondant Class

It's been a very down time for me the past month and I was quite ill and unable to do much of anything. Things started getting hectic again the moment I improved in health a little. Anyway, there was a request for a fondant class from a private entity and here is the outcome of it.

The individual cakes shown were the creations of students after a basic fondant class I taught. I must say that they did quite well with their creativeness, especially when it was their first time. There was no individual design for students to follow...instead, I taught them the basics of fondant and let them create their own designs using the techniques I taught.

The Class included :

1. How to color and handle fondant
2. How to cover a cake with fondant
3. Basic Borders and pastilage using various cutters.
4. The Ribbon Rose
5. Simple Bow and Ribbon.
